Distillerie d'Absinthe Persoz

In Couvet, at the historic cradle of absinthe, Gaudentia Persoz distils within a family continuity rooted in clandestine times. The first legally recognized female absinthe distiller in Switzerland, she carries forward a recipe inherited from her husband’s grandmother — a formula born of prohibition that became the foundation of the house.

Expression

A Val-de-Travers absinthe verte of assertive balance, where vegetal richness and anise unfold within a broad and controlled structure.

Character

A characteristic herbal profile in which anise leads and intertwines with a rich vegetal array, supported by delicate, well-integrated bitterness. The palate opens with confident clarity, then evolves fluidly toward a dry and balanced finish that invites attentive appreciation of its botanical complexity.

Ritual

Slowly diluted with iced water to allow the louche to form naturally. Best served without sugar to preserve the balance and vegetal character. Intended for focused, unhurried tasting. Suitable for experienced drinkers and classic absinthe service.
