The Val-de-Travers at the heart of the Saint-Martin
The Saint-Martin is a festive, food-loving celebration that brings thousands of visitors together every year around local traditions and flavours. For this edition, we are delighted to share the world of absinthe with the people of the Jura: its history, its emblematic plant, wormwood, and the craftsmanship of the distillers of the Val-de-Travers, birthplace of the Green Fairy.
What’s on in the Hôtel-Dieu courtyard
- The giant fountain: you can’t miss it! Our monumental absinthe fountain will stand at the centre of the courtyard, so you can discover the ritual of slowly adding fresh water to your absinthe.
- Tastings: come and discover a selection of absinthes, along with a few of the Maison’s specialities.
- Live distillation: together with Distillerie Wanner from Couvet, watch a real absinthe distillation in front of the public on Saturday 14 November in the afternoon and on Sunday 15 November from 11 am to 3 pm. A unique chance to see the Green Fairy come to life before your eyes!
Absinthe de la Saint-Martin: a one-off cuvée limited to 100 bottles
To mark the occasion, we have created an exclusive cuvée with Distillerie Wanner: Absinthe de la Saint-Martin, distilled on site in Porrentruy on 14 and 15 November 2026.
The recipe comes from Fernand, a clandestine distiller who made absinthe illegally in the Val-de-Travers from the age of 14 to 97. It is a true piece of history, bottled at 55% ABV in 50 cl bottles.
This cuvée is limited to 100 bottles and available for pre-order at our stand during the first weekend. Buyers can then collect their bottle during the Revira weekend on 21 and 22 November. First come, first served!
